Pixel vs mm2 for some Nikons

Listed are the pixel densities of some Nikons and a Canon. Why is this important? When birding, cropping is  often done when the telephoto lens could not quite reach the bird. By cropping, we have "digital zoom". The denser the sensor, the more information is captured, hence a picture that more closely resemble the real bird.
